3 lbs. Raw Sugar 6.5% ABV
2.5 oz. Willamette (Pellets, 6.00 %AA) boiled 60 min.  
1 oz. Saaz (Pellets, 3.00 %AA) boiled 15 min.  
2 oz. Saaz (Pellets, 3.00 %AA) boiled 1 min.  
1 big starter White Labs WLP565 Belgian Saison I  
Notes
Making a 10 gallon batch with Jay and splitting it. I further split this batch in two and put half of it on 4 lbs of peaches.

MASH low & long - 146º to 149º (90 mins)
BOIL for 90 mins, add bittering hops at 60; sugar pre-boil
FERMENT normally for 3-5 days then warm, and long - this yeast strain is stubborn
